After seasoning, the wood is left for about three weeks in a roofed site. The first task of the cooper is to transform the boards into staves. These are cut, the length is adjusted and then thinned to a thickness of about 27 mm, leaving a concave face (the outside of the barrel) and a convex face (the inside). Next, the joiner carries out a double task: that of providing the stave with a curved outline, wider at the centre and narrower at the ends, and tapering the edges to ensure a tight fit when they are joined to form the body of the barrel.
