American INTENSE oak (species Quercus Albar). Wood from the state of Ohio, well-known for its intense, dominating aromas (vanilla, coconut, etc.). It is characterised by a fast contribution of aromatic aldehydes. Limit periods for optimal ageing, in harmony between wine and wood: between three and four months (testing with new barrels and with Spanish wines as reference). The great density of its structure significantly limits extraction of flavouring matter and the development of the wine during ageing.
